Description

A comforting and flavorful dish featuring savory ground beef, creamy refried beans, and melted cheese wrapped in tortillas and drenched in enchilada sauce.


Ingredients

  • 1 pound ground beef
  • 1 can (10 oz) enchilada sauce
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 can (15 oz) refried beans
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Sour cream and chopped cilantro for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add onions, garlic powder, chili powder, salt, and pepper to the skillet and cook until onions are soft.
  4. Warm the tortillas in a separate pan or microwave until soft.
  5. Spread a layer of refried beans on each tortilla, then add the beef mixture and a sprinkle of cheese. Roll up tightly and place in a baking dish seam-side down.
  6. Pour enchilada sauce over the top of the burritos and sprinkle remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  8. Serve hot with sour cream and cilantro if desired.

Notes

For an extra kick, add diced jalapeños or hot sauce to the beef mixture. Use different types of cheese such as pepper jack for a spicier flavor.
