- 2 large eggs
- 1/4 cup milk
- 1/4 cup spinach, chopped
- 1/4 cup bell peppers, diced
- 1/4 cup zucchini, grated
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the eggs, milk, salt, and pepper in a bowl.
- Heat a little olive oil in a skillet over medium heat. Add the chopped vegetables and sauté for 3-4 minutes until soft.
- Pour the egg mixture over the veggies in the skillet.
- Cook for a few minutes until the edges start setting, then transfer the skillet to the oven.
- Bake for 10-15 minutes, or until the frittata is set and slightly golden.
- Let it cool, then cut into small pieces for your baby to enjoy.
