- 1 lb ground beef
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 packet taco seasoning
- 3 cups crushed tortilla chips
- 2 cups shredded cheddar cheese
- Sour cream and green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the ground beef and onion in a skillet over medium heat until the beef is browned. Drain any excess fat.
- Mix in black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5 minutes until everything is well combined and heated through.
- Layer half of the crushed tortilla chips in a baking dish. Pour half of the beef mixture over the chips, and sprinkle with half of the cheese. Repeat the layers with the remaining chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with sour cream and green onions before serving.
Notes
For a lighter version, swap out ground beef for ground turkey or a meat substitute. You can prepare the beef mixture ahead and assemble the casserole right before baking.
