Description

A comforting fusion of classic walking taco flavors in a hearty casserole, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 packet taco seasoning
  • 3 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • Sour cream and green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef and onion in a skillet over medium heat until the beef is browned. Drain any excess fat.
  3. Mix in black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5 minutes until everything is well combined and heated through.
  4. Layer half of the crushed tortilla chips in a baking dish. Pour half of the beef mixture over the chips, and sprinkle with half of the cheese. Repeat the layers with the remaining chips, beef mixture, and cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Garnish with sour cream and green onions before serving.

Notes

For a lighter version, swap out ground beef for ground turkey or a meat substitute. You can prepare the beef mixture ahead and assemble the casserole right before baking.
