- 6 cups cornflakes
- 1/4 cup grated parmesan cheese
- 2 large eggs
- 2 tablespoons hot sauce
- 2 pounds chicken breast tenderloins
- 1/2 cup honey
- Fresh herbs for garnish
Instructions
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Crush the cornflakes into fine crumbs and mix them with the parmesan cheese, smoked paprika, onion powder, garlic powder, and salt in a shallow bowl.
- Beat the eggs with the hot sauce in another bowl.
- Coat the chicken tenderloins in the egg mixture, then dredge them in the cornflake crumbs.
- Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes until the chicken is golden brown.
- Prepare the sauce by warming the honey with hot sauce and spices in a saucepan over low heat while the chicken is baking.
- Drizzle the warm sauce over the baked chicken before serving and garnish with fresh herbs.
Notes
For extra crunch, press down on the cornflake coating before baking. Store leftovers in an airtight container for up to 3 days.
