- 4 salmon fillets (about 4 ounces each)
- 1 batch of homemade or store-bought teriyaki sauce
- 2 cups cooked rice
- 2 cups cooked broccoli
- 1/3 cup diced scallion
Instructions
- If using frozen salmon, thaw overnight in the fridge.
- Preheat your oven to 400°F (200°C).
- Lightly oil a baking dish and arrange the salmon skin-side down.
- Brush half the teriyaki sauce over the fillets.
- Optional: Allow the salmon to marinate for about 20 minutes for enhanced flavor.
- Bake uncovered for 12-18 minutes until flaky and cooked through (10-14 minutes for cubed salmon).
- Optional: Broil for an additional couple of minutes for added crispiness.
- Serve with the remaining teriyaki sauce drizzled over rice and veggies, and garnish if desired.
