A delicious and easy meal combining tender chicken, sweet BBQ sauce, and melted cheese in crispy tortillas, perfect for any time of the day.
Ingredients

- 1 teaspoon Olive oil
- ½ cup sliced red onions
- 2 cups cooked chicken breast (shredded into big chunks)
- ½ cup BBQ sauce
- 2 tortillas (10-12 inch burrito size)
- 2 tablespoons Butter (room temperature)
- 2 cups shredded cheddar-jack cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and sauté until soft, about 5 minutes.
- Stir in shredded chicken and BBQ sauce, mix well, and remove from heat.
- Spread butter on one side of each tortilla.
- In another skillet, place one tortilla butter-side down.
- Sprinkle ¼ cup of cheese on one half, layer half of the chicken mixture on top, then add another ¼ cup of cheese.
- Fold the tortilla in half carefully.
- Cook until golden brown on one side (3-4 minutes), then flip to cook the other side until golden.
- Transfer to a cutting board or wire rack, and repeat with the remaining ingredients.
Notes
Serve warm with sides like salsa, guacamole, or sour cream for dipping. Use rotisserie chicken for convenience, and feel free to mix different cheeses.
