Description

A delightful blueberry bread that’s perfect for breakfast or as a snack, featuring a moist texture and sweet flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix together flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Cream together the butter and sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix just until combined.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter bread, increase sugar to 3/4 cup. Gently fold in blueberries to avoid crushing them. Experiment with lemon zest for added flavor.
