Ingredients

  • 1 pound penne pasta
  • 1 package (8 oz) cream cheese
  • 1/2 cup buffalo sauce (Frank’s Red Hot Wing Sauce)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 pound cooked and shredded chicken breast or thigh
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, combine cream cheese, buffalo sauce, and chicken broth. Stir until the cream cheese melts into a smooth sauce.
  3. Add garlic powder and kosher salt; whisk until blended.
  4. Stir in shredded chicken until evenly coated with the sauce.
  5. Fold in cooked pasta and both cheeses; remove from heat once well combined.
  6. Serve warm with optional ranch or blue cheese dressing.

Notes

For added flavor, consider using rotisserie chicken. Adjust buffalo sauce to taste for spice preference.
