A quick and easy soda bread featuring the rich flavors of cheddar cheese and fresh herbs, perfect as a snack or accompaniment to meals.

- 4 cups all-purpose flour
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 tbsp chopped fresh chives
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh sage
- 1 cup shredded cheddar cheese
- 1 ¾ cups buttermilk
Instructions
- Preheat the oven to 425°F (220°C).
- Combine flour, baking soda, and salt in a mixing bowl. Stir in the herbs and cheese.
- Add buttermilk and mix until everything is combined; be careful not to overmix.
- Turn the dough onto a floured surface and shape it into a ball. Pat it into a circle about 7 inches wide.
- Transfer the dough to a floured baking sheet. Score a cross on top of the dough.
- Bake for 15 minutes at 425°F, then reduce the heat to 375°F (190°C) and bake for an additional 30-35 minutes, or until the bread sounds hollow when tapped.
Notes
Make sure your baking soda is fresh for optimal rising. Experiment with different cheeses or herbs for varied flavors.
