- 4 chicken thighs

- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried thyme

- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper and brown them in the skillet for about 5 minutes on each side. Remove and set aside.
- Add the chopped onion and garlic to the skillet; sauté until softened.
- Stir in the diced tomatoes, chicken broth, and thyme.
- Return the chicken to the skillet, cover, and simmer for 30 minutes, until cooked through.
- Adjust seasoning as needed and garnish with fresh parsley before serving.
Notes
Make sure not to overcrowd the skillet when browning the chicken. You can add more vegetables like bell peppers or mushrooms for extra flavor.
