- 1 1/4 lbs chicken breast
- 2 Tbsp olive oil
- 8 oz brown button mushrooms, sliced
- 3/4 cup dry marsala wine
- 3/4 cup reduced-sodium chicken stock
- 1/2 cup heavy whipping cream
- Fresh parsley for garnish
Instructions
- Cut chicken breasts in half and pound them to an even thickness. Season with salt and pepper, then dredge in flour.
- Heat olive oil in a heavy-bottomed pan over medium heat. Add chicken and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
- Add sliced mushrooms to the same pan and sauté until golden brown. Add onion powder and garlic.
- Pour in marsala wine to deglaze the pan, scraping up any bits stuck at the bottom. Add chicken stock and cream, stirring well.
- Let the sauce simmer until it thickens.
- Return the chicken to the pan, coating it with the sauce. Garnish with fresh parsley before serving.
Notes
For a richer flavor, use a good quality dry Marsala wine. Adjust cream according to taste.
