Description

A delightful dish combining tender chicken with a rich garlic Parmesan rice, perfect for family dinners or impressing guests.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup white wine (optional)
  • 2 tablespoons unsalted butter
  • 1 cup long-grain white rice
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 2 cups chicken broth for rice
  • Chopped fresh parsley for garnish

Instructions

  1. Season the chicken strips with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Cook the chicken for 3-4 minutes on each side until golden brown, then remove it and set aside.
  3. In the same skillet, sauté the minced garlic for 1 minute until fragrant.
  4. Add chicken broth, lemon juice, and white wine (if using). Simmer for 3-4 minutes.
  5. Stir in the butter until it melts. Return the chicken to the skillet, tossing to coat it in the sauce.
  6. For the rice, combine the rice, chicken broth, and minced garlic in a saucepan. Bring it to a boil, then reduce the heat, cover, and simmer for 15-20 minutes.
  7. Stir the Parmesan cheese into the rice and season with salt and pepper.
  8. Plate the garlic Parmesan rice and top it with the chicken scampi. Garnish with parsley before serving.

Notes

Use freshly grated Parmesan cheese for the best flavor. Adjust the amount of garlic to suit your taste.
