- 2 chicken breasts
- 8 oz bowtie pasta
- 2 cups broccoli florets
- 1/4 cup cowboy butter
- 1 lemon (zested and juiced)
- Salt and pepper to taste
- Parmesan cheese (for serving)
Instructions
- Cook the bowtie pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli to the pot. Drain and set aside.
- In a large pan, melt the cowboy butter over medium heat. Add the chicken breasts, seasoning with salt and pepper, and cook until golden and cooked through, about 6-7 minutes per side.
- Remove the chicken from the pan and slice it.
- In the same pan, add the lemon juice and zest, stirring to combine. Add the drained pasta and broccoli, tossing to coat in the sauce.
- Place the sliced chicken on top, mix gently, and serve with grated Parmesan cheese.
Notes
For extra flavor, consider adding garlic or herbs to the cowboy butter.
