Description

A quick and delicious meal featuring juicy chicken, hearty bowtie pasta, and fresh broccoli, all tossed in flavorful cowboy butter and lemon.


Ingredients

  • 2 chicken breasts
  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 1/4 cup cowboy butter
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Instructions

  1. Cook the bowtie pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli to the pot. Drain and set aside.
  2. In a large pan, melt the cowboy butter over medium heat. Add the chicken breasts, seasoning with salt and pepper, and cook until golden and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the pan and slice it.
  4. In the same pan, add the lemon juice and zest, stirring to combine. Add the drained pasta and broccoli, tossing to coat in the sauce.
  5. Place the sliced chicken on top, mix gently, and serve with grated Parmesan cheese.

Notes

For extra flavor, consider adding garlic or herbs to the cowboy butter.
