- 3 cloves garlic (minced)
- 1 cup sun-dried tomatoes (oil-packed)
- 1 cup vegetable broth (or chicken broth)
- 2 cups fresh spinach
- 1/2 cup Parmesan cheese (grated)
- 1 teaspoon dried oregano (or fresh)
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (freshly cracked)
- 1 tablespoon lemon juice (or lime juice)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the sun-dried tomatoes and cook for another minute.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the butter beans, spinach, oregano, salt, and pepper. Mix well.
- Cook for about 5-7 minutes, or until the spinach wilts and everything is heated through.
- Stir in the grated Parmesan cheese and lemon juice, cooking for an additional 1-2 minutes until creamy.
