Description

A delicious and easy meal that yields juicy chicken with a crunchy and flavorful crust, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 teaspoons Italian herbs (oregano, basil, thyme)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 eggs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, Italian herbs, garlic powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast into the eggs, then coat with the breadcrumb mixture.
  5. Place coated chicken breasts on a baking sheet and drizzle with olive oil.
  6. Bake for 25-30 minutes, or until golden brown and cooked through.

Notes

Make sure to pound chicken breasts to an even thickness for even cooking. For an extra crunch, add some crushed cornflakes to the breadcrumb mixture.
