- 2 cups leftover mashed potatoes
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- Combine the leftover mashed potatoes, Parmesan cheese, minced garlic, breadcrumbs, and egg in a large bowl. Mix well until fully combined.
- Season with salt and pepper to taste.
- Shape the mixture into small balls, about 1 inch in diameter.
- Heat oil in a frying pan over medium heat.
- Fry the potato balls in batches until golden brown and crispy, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Serve warm.
Notes
Store leftover potato balls in an airtight container in the fridge for up to 3 days or freeze after cooking. Reheat in the oven or air fryer.
