Description

This refreshing Cucumber Tomato Salad combines crisp cucumbers, sweet tomatoes, and tangy vinegar, balanced with creamy avocado and feta cheese, perfect for a light meal or side dish.


Ingredients

  • 2 whole English cucumbers
  • 3 small Roma tomatoes
  • 1/2 whole red onion
  • 1/3 cup water
  • 1/3 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh dill
  • 1/4 cup crumbled feta cheese
  • 1 small ripe avocado

Instructions

  1. Place the cucumbers, tomatoes, and onion in a large bowl.
  2. In a jar with a tightly fitted lid, combine the water, vinegar, sugar, salt, and pepper. Shake vigorously for about 10 seconds to mix well.
  3. Pour this mixture over the cucumbers, tomatoes, and onions. Gently mix to coat all the vegetables.
  4. Cover the bowl and refrigerate for 1 hour to let the flavors blend. Afterward, drain off the liquid.
  5. Toss in the fresh dill, feta cheese, and diced avocado.
  6. Transfer the salad to a serving bowl or divide it onto individual plates. Enjoy!

Notes

For optimal freshness, add the avocado just before serving. This salad can be prepared a day in advance, and it’s best eaten within 1-2 days.
