- 2 Whole Wheat Wraps
- 1/2 cup Hummus
- 1 cup Fresh Spinach or Arugula
- 1 medium Zucchini
- 1 medium Red Bell Pepper
- 1 medium Yellow Bell Pepper
- 1/2 medium Red Onion
- 1 cup Cherry Tomatoes
- 2 tablespoons Olive Oil
- to taste Salt
- to taste Pepper
- 1/2 cup Greek Yogurt
- 2 tablespoons Lemon Juice
- 1 teaspoon Lemon Zest
- 1 tablespoon Fresh Dill
- 1 tablespoon Fresh Parsley
- 1 clove Minced Garlic
- to taste Salt
- to taste Pepper
Instructions
- Start by preheating your grill or a grill pan over medium heat.
- While the grill heats up, chop the zucchini, bell peppers, red onion, and cherry tomatoes into bite-sized pieces.
- In a bowl, mix the chopped vegetables with olive oil, salt, and pepper. Toss well to coat everything evenly.
- Place the seasoned veggies on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- In another bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the zesty herb sauce.
- Once the veggies are cooked, remove them from the grill.
- Spread hummus evenly over each wrap, then layer with fresh spinach or arugula.
- Add the grilled vegetables on top of the greens.
- Drizzle the zesty herb sauce over the veggies.
- Roll up each wrap tightly, then slice in half if desired.
Notes
Serve warm or at room temperature with a side salad or chips. Store leftovers in the refrigerator for up to three days.
