Ingredients

  • 2 Whole Wheat Wraps
  • 1/2 cup Hummus
  • 1 cup Fresh Spinach or Arugula
  • 1 medium Zucchini
  • 1 medium Red Bell Pepper
  • 1 medium Yellow Bell Pepper
  • 1/2 medium Red Onion
  • 1 cup Cherry Tomatoes
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Greek Yogurt
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Fresh Dill
  • 1 tablespoon Fresh Parsley
  • 1 clove Minced Garlic
  • to taste Salt
  • to taste Pepper

Instructions

  1. Start by preheating your grill or a grill pan over medium heat.
  2. While the grill heats up, chop the zucchini, bell peppers, red onion, and cherry tomatoes into bite-sized pieces.
  3. In a bowl, mix the chopped vegetables with olive oil, salt, and pepper. Toss well to coat everything evenly.
  4. Place the seasoned veggies on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. In another bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the zesty herb sauce.
  6. Once the veggies are cooked, remove them from the grill.
  7. Spread hummus evenly over each wrap, then layer with fresh spinach or arugula.
  8. Add the grilled vegetables on top of the greens.
  9. Drizzle the zesty herb sauce over the veggies.
  10. Roll up each wrap tightly, then slice in half if desired.

Notes

Serve warm or at room temperature with a side salad or chips. Store leftovers in the refrigerator for up to three days.
