Description

Delicious and colorful Grilled Pineapple Chicken Kabobs combining sweet pineapple, savory chicken, and fresh vegetables, perfect for summer barbecues.

Ingredients

Scale
  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 teaspoons minced fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix together the soy sauce, brown sugar, rice vinegar, cornstarch, ginger, and garlic to make the teriyaki glaze.
  3. Toss the chicken, pineapple, bell pepper, and onion in olive oil, salt, and pepper.
  4. Thread the chicken and vegetables onto skewers, alternating between each.
  5. Grill the skewers for about 10-15 minutes, basting frequently with the teriyaki glaze, until the chicken is fully cooked.
  6. Serve warm and enjoy!

Notes

Soak wooden skewers in water for about 30 minutes before grilling to prevent them from burning. Feel free to mix and match vegetables and try different marinades for flavor.
