Description

A quick and satisfying one-pot meal perfect for busy weeknights, packed with hearty ingredients and rich flavors.


Ingredients

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 12 oz spaghetti pasta
  • 24 oz tomato sauce
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp dried Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Heat a large pot over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Season with salt and pepper. Cook until browned and no pink remains.
  2. Drain excess grease if necessary, leaving about a tablespoon.
  3. Reduce heat to medium. Add diced onion to the beef and cook until translucent.
  4. Add minced garlic and dried Italian seasoning. Stir constantly for about one minute until fragrant.
  5. Stir in tomato paste and cook for one minute to concentrate the flavor.
  6. Pour in tomato sauce and beef broth, stirring to scrape up browned bits from the bottom of the pot.
  7. Add dry spaghetti, breaking it in half if necessary to fit. Stir to submerge pasta completely in liquid.
  8. Bring the mixture to a boil, then reduce heat to low. Cover with a lid slightly ajar.
  9. Simmer for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is al dente and liquid is absorbed.
  10. Remove the pot from heat. Sprinkle shredded mozzarella cheese over the top. Cover tightly and let sit for 5 minutes to allow cheese to melt.
  11. Give a final stir to incorporate cheese. Serve hot, optionally topped with fresh basil or parmesan.

Notes

To add more veggies, consider throwing in some diced bell peppers or mushrooms when cooking the onion. For a creamier texture, stir in a little cream or a dollop of sour cream just before serving.
