Description

A hearty one-pan meal featuring chicken, pasta, cheese, and smoky jalapeños, ready in about 30 minutes.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 8 oz pasta (like penne or rotini)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup ranch dressing
  • 2 jalapeños, diced (seeds removed for less heat)
  • 1 tablespoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt, pepper, and smoked paprika, and cook until browned and cooked through, about 5-7 minutes.
  2. Cook the pasta according to package instructions. Drain and set aside.
  3. Add the diced jalapeños to the skillet and sauté for another 2-3 minutes.
  4. Stir in the ranch dressing and shredded cheese, mixing until the cheese is melted and the sauce is creamy.
  5. Add the cooked pasta to the skillet and stir to combine, ensuring the pasta is well coated.
  6. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh parsley if desired, and serve warm.

Notes

This dish pairs well with a side salad or garlic bread. Leftovers can be refrigerated for up to 3-4 days.
