Description
Delicious and flavorful Korean BBQ Beef Short Ribs, perfect for gatherings and family dinners.
Ingredients
Scale
- 2 pounds (900 g) flanken-style beef short ribs, thinly sliced across the bone
- ½ cup (120 ml) soy sauce, preferably low sodium
- 2 tablespoons brown sugar, packed
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon toasted sesame oil
- ¼ cup (60 ml) Asian pear or apple juice
- 2 stalks green onions, finely chopped
- 1 tablespoon rice vinegar
- ½ teaspoon red pepper flakes (optional)
- Freshly ground black pepper, to taste
Instructions
- Trim and slice the ribs across the bone into ¼-inch (6 mm) thick strips if they are not pre-sliced. This should take about 10 minutes.
- In a large mixing bowl, whisk together the soy sauce, brown sugar, minced garlic, grated ginger, toasted sesame oil, Asian pear or apple juice, rice vinegar, chopped green onions, red pepper flakes (if using), and black pepper. Continue mixing until the sugar dissolves; this should take about 5 minutes.
- Submerge the sliced ribs in the marinade, ensuring each piece is coated well. Cover with plastic wrap or transfer to an airtight container. Marinate in the fridge for at least 3 hours, but ideally overnight.
- Preheat your grill to medium-high heat (about 400°F / 205°C). Clean and oil the grates to prevent sticking; this should take about 10 minutes.
- Remove the ribs from the marinade, letting any excess drip off. Place the ribs on the hot grill in a single layer. Grill for 2-3 minutes per side until a caramelized crust forms with some charred spots, but the ribs remain juicy inside.
- Transfer the ribs to a serving plate and let them rest for 5 minutes. If desired, garnish with extra chopped green onions and sesame seeds.
Notes
Marinate the ribs overnight for the best flavor. Serve with steamed rice and pickled vegetables for a complete meal.
