Description

Delightful Rhubarb Rolls that combine tart rhubarb with sweet sugar and cinnamon, perfect for breakfast or snack time.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 1 egg
  • 1 cup rhubarb (chopped)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast.
  2. In a saucepan, heat milk and melted butter until warm. Add to dry ingredients along with the egg and mix until a soft dough forms.
  3. Knead the dough on a floured surface until smooth, about 5 minutes.
  4. Let the dough rise in a warm place until doubled in size, about 60 minutes.
  5. Roll out the dough into a rectangle. Spread chopped rhubarb over the surface, sprinkle with brown sugar and cinnamon.
  6. Roll the dough tightly and cut into rolls.
  7. Place rolls in a greased baking dish and let rise again for 30 minutes.
  8. Bake at 350°F (175°C) for 25-30 minutes or until golden brown.
  9. Cool slightly before serving.

Notes

Serve warm, optionally with icing. Can be stored in an airtight container for up to 3 days, or frozen for 2 months.
