Description
Delightful Rhubarb Rolls that combine tart rhubarb with sweet sugar and cinnamon, perfect for breakfast or snack time.
Ingredients

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon salt
- 1 tablespoon instant yeast
- 1/2 cup milk
- 1/4 cup butter (melted)
- 1 egg
- 1 cup rhubarb (chopped)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Instructions
- In a large bowl, mix flour, sugar, salt, and yeast.
- In a saucepan, heat milk and melted butter until warm. Add to dry ingredients along with the egg and mix until a soft dough forms.
- Knead the dough on a floured surface until smooth, about 5 minutes.
- Let the dough rise in a warm place until doubled in size, about 60 minutes.
- Roll out the dough into a rectangle. Spread chopped rhubarb over the surface, sprinkle with brown sugar and cinnamon.
- Roll the dough tightly and cut into rolls.
- Place rolls in a greased baking dish and let rise again for 30 minutes.
- Bake at 350°F (175°C) for 25-30 minutes or until golden brown.
- Cool slightly before serving.
Notes
Serve warm, optionally with icing. Can be stored in an airtight container for up to 3 days, or frozen for 2 months.
