- 4 pieces Boneless, skinless chicken breasts
- 1 cup Long-grain white rice
- 4 cups Chicken broth
- 1/4 cup Lemon juice (freshly squeezed)
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- to taste Salt and pepper
- 2 tablespoons Olive oil (optional)
- 1 piece Lemon, sliced (optional for serving)
- 1/4 cup Fresh parsley, chopped
Instructions
- Start by seasoning the chicken breasts with salt, pepper, garlic powder, and onion powder. If you want, you can sear the chicken in olive oil in a skillet for added flavor.
- Place the chicken in the slow cooker. Add the rice, chicken broth, lemon juice, thyme, and oregano on top of the chicken.
- Stir everything together gently to combine.
- Cover and cook on low for about 360-480 minutes or until the chicken is fully cooked and the rice is tender.
- Once done, shred the chicken with two forks and mix it back into the rice.
- Taste and adjust the seasoning if needed.
Notes
Serve the chicken and rice warm, garnished with fresh parsley and lemon slices. Pairs nicely with a simple side salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for 3-4 days.
