Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Long-grain white rice
  • 4 cups Chicken broth
  • 1/4 cup Lemon juice (freshly squeezed)
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • to taste Salt and pepper
  • 2 tablespoons Olive oil (optional)
  • 1 piece Lemon, sliced (optional for serving)
  • 1/4 cup Fresh parsley, chopped

Instructions

  1. Start by seasoning the chicken breasts with salt, pepper, garlic powder, and onion powder. If you want, you can sear the chicken in olive oil in a skillet for added flavor.
  2. Place the chicken in the slow cooker. Add the rice, chicken broth, lemon juice, thyme, and oregano on top of the chicken.
  3. Stir everything together gently to combine.
  4. Cover and cook on low for about 360-480 minutes or until the chicken is fully cooked and the rice is tender.
  5. Once done, shred the chicken with two forks and mix it back into the rice.
  6. Taste and adjust the seasoning if needed.

Notes

Serve the chicken and rice warm, garnished with fresh parsley and lemon slices. Pairs nicely with a simple side salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for 3-4 days.
