A refreshing salad combining sweet pineapple and crisp cucumber, perfect for warm days.

- 2 cups diced fresh pineapple
- 1 large English cucumber, diced (or 2 Persian cucumbers, diced)
- 1/4 small red onion, sliced thin
- 1/4 cup chopped cilantro leaves
- 1 small jalapeño, sliced thin (optional)
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp lime juice, freshly squeezed
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp crushed red pepper flakes (optional)
Instructions
- Start by preparing the ingredients. Dice the fresh pineapple and cucumber, and thinly slice the red onion and jalapeño.
- Combine in a large bowl the diced pineapple, cucumber, red onion, chopped cilantro, and sliced jalapeño.
- Whisk together in a small bowl the lime juice, honey or maple syrup, olive oil, salt, black pepper, and crushed red pepper flakes.
- Drizzle the dressing over the salad mixture and toss gently to combine.
- Add the crumbled feta cheese on top if using, and lightly toss again.
- Serve immediately, or refrigerate for about 30 minutes to allow the flavors to meld.

Best served fresh; consume leftovers within 1-2 days.
