Description

A refreshing salad combining sweet pineapple and crisp cucumber, perfect for warm days.


Ingredients

  • 2 cups diced fresh pineapple
  • 1 large English cucumber, diced (or 2 Persian cucumbers, diced)
  • 1/4 small red onion, sliced thin
  • 1/4 cup chopped cilantro leaves
  • 1 small jalapeño, sliced thin (optional)
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp lime juice, freshly squeezed
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Start by preparing the ingredients. Dice the fresh pineapple and cucumber, and thinly slice the red onion and jalapeño.
  2. Combine in a large bowl the diced pineapple, cucumber, red onion, chopped cilantro, and sliced jalapeño.
  3. Whisk together in a small bowl the lime juice, honey or maple syrup, olive oil, salt, black pepper, and crushed red pepper flakes.
  4. Drizzle the dressing over the salad mixture and toss gently to combine.
  5. Add the crumbled feta cheese on top if using, and lightly toss again.
  6. Serve immediately, or refrigerate for about 30 minutes to allow the flavors to meld.

Best served fresh; consume leftovers within 1-2 days.
